1 9-inch deep dish pie crust (store bought is fine)
6-8 slices of bacon, fried and crumbled
1 Cup Swiss cheese, grated
3 eggs, beaten
1¼ C half and half
¼ tsp. salt
1/4 tsp. pepper
1 10 oz. box spinach (in the freezer section), defrosted and drained well (I press with paper towels)

Mix all ingredients and pour into pie crust. Bake at 375 for 35-45 minutes or until brown and puffed.

I’ve been making this for years and years. Many of my children request this as their birthday dinner. Ever since we’ve had kids, we’ve called this “spinach pizza” because with young children, I learned long ago, the likelihood of them eating any given food begins with the name. Call it whatever you think they’ll eat! Also, I use Tony Chachere’s instead of salt and pepper. I don’t measure, but eyeball it and stop adding it when I can see it in the mixture.

I’ve left out the bacon on Lenten Fridays or substituted strips of ham (just luncheon meat) if I didn’t have bacon or didn’t have time to cook it.
