3 slices bacon
6 to 8 red potatoes (sliced)
Small onion (peeled and diced)
Lard
Salt and pepper

Directions:
Directions:
Wash potatoes, slice.
Boil the potatoes slices in water until soft.
Drain cooked potato slices, pat dry.
Dice onions.
Melt lard in a large skillet.
Add the bacon pieces and brown.
Add boiled potatoes and onion.
Gently stir, try not to break up the potato slices.
Salt and pepper to taste.
Allow to drain a bit on a wire rack with a paper towel on top.

This is a perfect Grandma Saffert recipe. Written out in German and gives no amounts or cooking times. The Bohemian-German cooks, just knew. I added the amounts how I made them. You can adjust if you want. I do remember mom making these, so me making them is 4th generation!
