2/3 cup sugar
1/3 cup cornstarch
1/4 teas. salt
2 cups milk (I use skim)
2 eggs, slightly beaten
2 Tabl. butter or margarine
1 1/2 teas. vanilla

Directions:
Directions:
Mix together sugar, cornstarch, salt and 1/2 cup milk in a 4 cup measure until smooth. Stir in remaining milk. Microwave on high for 5 to 6 minutes or until smooth and thickened. Stir occasionally during last half of cooking. I usually stir every minute til thickened

Stir a small amount of hot mixture into eggs, then stir egg mixture into remaining hot mixture. Microwave on high for 45 seconds to 1 minute or until mixture just begins to boil.

Stir in butter and vanilla until well blended. Store in refrigerator (use as desired)

Pudding Sauce can be made. Follow recipe as directed but add 2 1/2 cups milk. Serve over pound cake or gingerbread. I also use a little more milk for banana pudding (not quite additional 1/2 cup.)

I believe this recipe came with our original microwave. I have used the recipe for years. All the family love it.

I use this pudding recipe for banana pudding using either graham crackers or vanilla wafers to layer with bananas. Some people don't care for bananas, so I have made it with just the pudding and cookies.

Another family favorite: this pudding with 2 cups of milk I use to fill crepes and serve with blueberry pie filling over top of crepe and whipped cream on top of that. Family LOVES these crepes.

I filled a graham cracker crust using the above recipe except substituted brown sugar for the sugar and increased butter to 3 tablespoons. Did not add extra milk to pudding for pie. It sets up nicely. Keep refrigerated.
