1 carrot

1 zucchini

1 red pepper

2 T. canned corn

8 stalks of broccoli

Dry rice noodles

DRESSING:
1 T. olive oil

1 T. Sweet Chili Sauce

Juice of ½ lime

½ T. cold water

Directions:
Directions:
Grate the carrot and zucchini into a large salad bowl.

Chop the pepper into thin strips and add to bowl, along with the
sweet corn.

Chop the broccoli into small stalks, and place in a saucepan with boiling water. Boil for 3 minutes until broccoli begins to get soft.

Remove from heat and add the rice noodles. Cover and let sit for 5 minutes.

Once the noodles are soft, drain the water, and add the broccoli and noodles to the salad.

DRESSING:
Mix ingredients in jar or cup. (More water may be needed depending on the preferred consistency.(

Pour over the salad and mix well.
