2 TBSP FRESH LIME JUICE
2 OR 3 DASHES HOT SAUCE
4 CUPS CHOPPED ROMAINE LETTUCE
2 AVOCADOES PEELED AND DICED
2 CUPS FRESH OR FROZEN WHOLE KERNAL CORN, THAWED AND DRAINED
2 15 OZ CANS BLACK BEANS, RNSED AND DRAINED
1 CUP CHOPPED CHERRY TOMATOES
ABOUT ¾ CUP PEPPER JACK CHEESE
KOSHER SALT AND GROUND BLACK PEPPER (TO TASTE)

DRESSING: WHISK TOGETHER CILANTRO, OIL, LIME JUICE AND HOT SAUCE

SALAD: IN A LARGE BOWL ADD THE REMAINING INGREDIENTS…ADD THE DRESSING AND TOSS WELL.
