12 oz package of jumbo pasta shells
2 T olive oil
1/2 c finely chopped onion
1 pound of ground, Italian sausage
minced garlic
1 egg
15 oz container of ricotta cheese
9 oz frozen container or bag of frozen spinach--thawed, squeezed dry
3/4 c grated Parmesan cheese
4 oz mozzarella cheese
salt / pepper
32 oz. pasta sauce---whatever you like

1. Boil water and cook pasta shells according to directions. Drain and rinse with cold water. Drain shells on paper towels.
2. Heat oil in a large skillet. Add onion and cook about 5 minutes. Add sausage--breaking into smaller pieces as you cook. Stir frequently and cook until no longer pink. Add garlic. Remove from heat.
3. In a large bowl, beat egg. Stir in ricotta cheese, spinach, 1/2 of the Parmesan cheese, mozzarella, salt and pepper. Add the cooked sausage. Stir until well-blended.
4. In a 13 x 9" pan, spread 1 c of pasta sauce. Fill the pasta shells with the mixture and place in the pan on top of the sauce. Fill all the shells and cover with the remaining sauce. Cover the pan with foil and bake for 30 minutes. Remove foil and sprinkle with Parmesan cheese. Return to oven and bake uncovered for another 10 minutes. Serve.
