1 can (10 ounce each)
RoTelŽ Original Diced Tomatoes & Green Chilies (undrained)
1 package (16 ounce each)
velveetaŽ (cut into 1/2-inch cubes)
2 lb of Ground Chuck, Beef or Turkey (Chef's preference)
1 bunch of Shallots
1 jar of Mount Olive Jalepeno Peppers

Directions:
In a medium saucepan over medium heat, cook meat
Drain meat in strainer
return meat to saucepan
add cheese stir in the can of rotel
When the mixture becomes hot and bubbly,
Continue stirring until cheese has melted and mixture begins to thicken, about 10 minutes.
garnish with shallots
Serve hot.
Serve warm as a dip with tortilla chips, crackers or cut-up fresh vegetables.
