1/4 c olive oil
3 T lemon juice
2 garlic cloves, minced
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
1 1/2 lbs boneless chicken breasts, cut into bite-sized pieces

Sauce:

6 oz. plain Greek yogurt
1/2 medium cucumber, peeled, seeded, and grated
1 T olive oil
2 tsp lemon juice
1 garlic clove, minced
1 tsp dried dill
1 pinch kosher salt

Marinade:

Combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Place in a large resealable plastic bag. Add chicken pieces to the bag, re-seal, and massage the marinade into the chicken. let marinate in the refrigerator for at least 3 hours and up to 5 hours, turning bag occasionally.

Sauce:

Combine all sauce ingredients and refrigerate for at least 1 to 2 hours to allow flavors to develop.

Skewers:

If using wooden skewers, soak for 30 minutes in water or use metal ones.

Chicken:

Heat grill to medium-high.
Remove chicken pieces and thread onto the skewers, discarding the extra marinade.
Grill about 6 minutes per side or until no longer pink.
Serve with tzatziki sauce for dipping or make pita sandwiches.
