Ingredients: 4 12 inch flour torillas 2 tbsp vegetable oil 1 package ground turkey breast 1 large onio nchopped 3 garlic cloves chopped 1 red bell pepper chopped 1 cup chicken stock or borth 1 15 oz can pinto beans rinsed and drained 1 16 oz jar tomatillo sauce 2 tbsp fresh cilantro leaves 1 10 oz package shredded monterey jack cheese

Directions:preheat oven 275 wrap flour torillas in foil and warm oven. preheat a large nonstick skillet with vegetable oil. add the ground turkey and break it up as it cooks about 4 minutes. add onions, garlic, bell peppers, salt and pepper. continue to cook for 3 minutes. add chicken stock pinto beans and 1.5 cups tomatillo salsa. turn the heat up to high and contineu to cook for 5-6 monutes or until the mixture is thickened. remove from the heat and add cilatro stirring to distribute. remove flour torillas from oven adn switch broiler on. pile turkey mixture into warm flour torillas psrinkle with 1/4 cup cheese, and then roll them up. line a casserole or baking dish with the burritos seam side down. top each burrito with a little bit of remaining 1/2 cup of tomatillo salsa spreading it over the burritos with back of spoon. spirnkle with remaining cheese and place the dish under broiler. broil for 5 minutes to melt and brown the cheese. |
