Ingredients: 1 3/4 cup flour 2 cups sugar 3/4 cup baking cocoa 1 1/2 tsp. baking soda 1 1/2 tsp. baking powder 1 cup boiling strong coffee1 tsp. salt 2 eggs 1 cup milk'1/2 cup vegetable oil 2 tsp. vanilla or almond flavoring
ICING: 1/2 cup milk 2 TBSP flour 1/2 cup shortening 1/2 cup sugar 1 cup peanut butter 1 tsp. vanilla

Directions:Preheat oven to 350º
In a mixing bowl, combine all dry ingredients. In another bowl mix remaining ingredients EXCEPT for the boiling coffee. Add dry ingredients to wet ingredients and mix on low for 3-4 minutes scrapping the sides of the bowl. Spray a 13 x 9 inch pan with nonstick cooking spray and sprinkle baking cocoa evenly on bottom and sides. Make sure you dump out all the excess. Add the boiling coffee to the mixture and stir until well incorporate. (Batter will be thin). Bake for 30 - 40 minutes or until a toothpick inserted comes out clean. Let cool completely on wire rack.
To Make the Icing: In a small saucepan, combine the milk and flour. Cook on low heat whisking constantly until this thickens. Approximately 5 minutes. Set aside and let cool completely In a small mixing bowl blend the sugar and shortening. Mix well until slightly fluffy. Add the cool milk/flour mixture, peanut butter and vanilla. Whip on high until fluffy. Spread on cake. You can sprinkle mini chocolate chips on top or reeses peanut butter cups. |

Notes: There are so many variations to add to this cake. This is the one cake my husband and boys ask me to make for their birthdays. I have done this in 2 8" round pans and put the peanut butter icing inbetween the layers and on top and then drizzle a chocolate sauce over top
