1-1/4 cups flour, divided
1/4 teaspoon salt
1/2 cup brown sugar
1/4 cup shortening
1/4 cup buttermilk
1/2 teaspoon baking soda
1 cup frozen blueberries, thawed and drained
1 egg

Directions:
Directions:
Combine 1 cup flour and salt; set aside. Cream sugar and shortening; add egg. Beat well. Combine buttermilk and soda, stirring well. Add to sugar mixture alternately with flour mixture, stirring just to combine. Combine berries with 1/4 cup flour; gently fold into batter. Spoon batter into greased muffin pans, filling 2/3 full. Bake at 350º for 20 - 25 minutes. Makes one dozen muffins.
