Cake:
2 cups sugar
1-1/2 cups cooking oil
4 eggs
3 cups grated carrots (do not pack)
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons cinnamon
1/3 cup chopped nuts

Icing:
1 pound confectioner's sugar
1 (8 ounce) package cream cheese, softened
2 teaspoons vanilla
1/2 stick butter
1/2 cup pecans

Cake:
Mix sugar, oil and eggs. Sift dry ingredients, then add carrots and nuts. Bake 40-60 minutes or up to 1-1/2 hours (depending on oven) at 300º. Can make in a large loaf pan, 13 X 9 baking dish, or in layers. Will take less time to bake in using layers.

Icing:
Cream butter, cheese, and sugar. Add remaining ingredients and mix. Spread on cooled cake. Keep cake refrigerated.

Note: It is delicious!!!!
