2- lbs. potatoes peeled and sliced thin
1/2 sliced onion
1 cup milk
1/4 cup milk
salt and pepper to taste
1 TBSP chopped chive
1 tsp onion powder
2 tsp. butter
1/2 pound velveeta cheese
1/2 cup sour cream

Alternatives: ham chunks, fried bacon pieces, sausage
** choose any or all

Directions:
In a quart saucepan melt butter and whisk in flour until smooth. Cook on LOW for 1-2 minutes. Slowly add milk whisking constantly until it gets smooth and silky. Chunk up cheese and add in stirring until completely melted. Turn off heat and add sour cream. Stir until it is completely incorporated.
Rinse sliced potatoes, onions and meat (if you chose to use ham) and put in a buttered casserole. Pour cheese sauce over potatoes. Place aluminum foil over casserole and set on a cookie sheet. (This may boil over a little). Bake at 350º for approximately 1 hour. Check potatoes with a fork to see how tender they are. Stir slightly. If potatoes are not done, place back in oven and bake an additional 1/2 hour. You can take the foil off and add additional cheese if you prefer. Bake an additional 15 minutes. Let cool slightly and serve.

Fried green beans or candied carrots pair well with this dish.
