2 Eggs per person, fork beaten

Cooked Bacon, Ham, or Salami (whatever you have)

Sliced and chopped: Onions, Tomatoes, and Peppers

Cheddar Cheese, grated

Salt, Pepper, and Dried Oregano

Heat skillet and add generous amount of butter to melt.

Add eggs.

Top with the rest of ingredients in the order listed.

Cover pan and lower heat to medium/low.

Cook until done, which depends on amount in pan.

This is, of course, either an omelet or frittata but Fred’s version.

PS: He courted me (Jan Moss) with this for dinner on our second date. I thought there might be more to come, but NOT!
