3 eggs
1 cup vegetable oil
3 tsp. vanilla (can substitute with orange flavoring , almond flavoring, etc.
2 tsp. granted orange or lemon peel
1 1/4 cup sugar
3 cups flour
3 tsp. baking powder
1/2 tsp. salt
Preheat oven to 350 degrees F

In a mixing bowl, add eggs, oil, vanilla and lemon/orange peel and mix on low until blended. Add sugar and mix well for 2-3 minutes. Mix dr ingredients in a separate bowl and then add to wet mixture. Mix until just incorporated. Drop by teaspoon o a cookie sheet lined with parchment paper. Flatten slightly with a bottom of a glass cup dipped in sugar. Bake for 10-13 minutes until golden brown.
Let cool on cookie sheet for 3 minutes. Transfer to wire rack. When completely cool, store in a plastic container with a lid.

These taste better if you use 1 tsp of the orange flavoring and the zest from an orange instead of the vanilla flavoring. No need to ice. They are also better the next day.
