2 - 10 oz pkg. frozen chopped spinach, cooked and drained dry
8 oz. Olive oil
4 cloves garlic, chopped
4 oz. Romano cheese
3 eggs

Directions:
Directions:
Fry Spinach in 4 oz. Olive Oil. Add garlic and 2 oz. Romano cheese. Cook for a few minutes and then add 4 more oz. Olive oil and 3 eggs. Cook until eggs are set. Add 2 more oz. of Romano cheese on top.
