3 cups flour
2 cups white sugar
1 tsp baking soda
1/2 tsp salt
3 large eggs beaten
1 cup vegetable oil
2 tsp vanilla
3 cups finely chopped apples
1/2 cup apple juice
1 cup chopped walnuts

Glaze
1 cup brown sugar
1/4 cup butter
1/3 cup whipping cream

Preheat oven to 350º

Grease and flour a 9 x 13 pan

In a large bowl, combine flour, sugar, soda and salt. Make a well in the centre and set aside.
In a medium bowl combine eggs, oil, apple juice and vanilla. Mix well.
Add wet mixture to the dry mixture and mix until just moistened.
Stir in apples and nuts. (Of course nuts are optional)
Spread batter into the pan.

Bake for 45-50 minutes. When baked allow to cool for about 5 minutes before adding sauce.

In a small saucepan combine brown sugar, butter and cream. Cook until bubbly and the sugar has dissolved. Cool slightly.

Drizzel warm sauce over the sightly cooled cake. Sauce will seep into the cake to keep it moist.

Cake can be served with or without the sauce depending on your personal preferences.
