3 lb onions
1 stick butter
salt
1 cup shredded cheese
2 Tbsp cornstarch

Directions:
Cook onions in salted water until tender. Take onions out of water, drained very well, put in buttered casserole. Add butter to onion liquid (about 2 cups). Put cheese in liquid. (Note: I remember Mammie using individual slices of Kraft cheese for this). Make thickening of cornstarch and water. Sometimes I pour off some of the liquid and add half and half. Pour this over the onions. Sprinkle with paprika. Bake for 30 minutes in a 350 degree oven.

I have learned that I never make these the same way twice. She made them exactly the same every time. Getting the sauce to the right thickness is my problem. If you go with only 2 cups of the onion juice, it will take about 5 to 7 slices of cheese if you use Kraft singles. For thickening, I make a smooth paste of cornstarch and water. Then I add a little of the onion liquid to the paste and get it smooth before pouring into the pan of liquid. Do that before adding the cheese. If the sauce is not thick enough, add a little more cornstarch following same steps. Don't want it too thick or too thin. Good luck! They always taste good, that is one plus!
