1 box cherry jello (can use any flavor of your choice. Aunt Mabel used orange usually)
1 small can crushed pineapple
1 cup cottage cheese, small curd
1 cup Cool Whip (more if desired)

Bring pineapple and juice to a boil. Add jello. Stir until dissolved. Fold in cottage cheese and Cool Whip. Chill.


I made this recently and used the dark cherry jello (large box), medium size can crushed pineapple, carton of cottage cheese (small curd), Lots more than 1 cup Cool Whip.

I add the dry jello to the carton of cottage cheese and mix well, I stir in the drained pineapple into the bowl. I did not boil my pineapple with juice.

I added Cool Whip until it was light in color. I used at least half of a large container of Cool Whip (or Kroger brand).

This is a good recipe to take to pot lucks. I used for bereavement meal after funeral at St James)

Matt used to request this salad. I made orange for years, but switched to cherry this last time. I have tasted many varieties of this salad, some not including cottage cheese. I made a very large amount and took most of it to St James Bereavement to serve at a funeral. It sets up well and can be made the night before. It is good to serve on holidays too.
