3 Eggs, beaten
1 C Oil
1 t Vanilla

2 C Sugar
2 C All-purpose Flour
1 t Cinnamon
1 t Salt
1 t Baking Soda
1 t Baking Powder
2 C Zucchini Squash, grated

Directions:
Directions:
Beat together: Eggs, Oil and Vanilla. Set aside.

Put all dry ingredients together in mixing bowl. Add beaten egg mix and zucchini. Mix with mixer for about 2 minutes or well blended.

Pour into 2 large loaf pans and bake at 325º for 45 minutes to 1 hour until inserted toothpick comes out clean.
