1/2 c. butter, softened
1/4 c. firmly packed brown sugar
1 egg, separated
1/2 t. vanilla
1 c. flour
1/4 t. salt
finely chopped salted peanutes
1 can vanilla frosting (or make your own!)
1 bag M&M's peanut candies

Directions:
Directions:
Mix the butter and brown sugar. Stir in the egg yolk and vanilla. Stir in the flour and salt. Chill the dough about 1 hour. Roll into 1" balls. Beat the egg white and roll the cookies in it, then roll them in the chopped salted peanuts. Place on a greased cookie sheet.

Bake at 350º for 5 minutes. Take the cookies out of the oven and make a thumbhole in the middle. Bake 5 more minutes. Let the cookies cool completely. When cooled, fill the thumbhole with vanilla frosting and place a M&M's candy on top of the frosting.
