Mom's Macaroni & Cheese Recipe

5 c. Cheddar Cheese Shredded
3 1/2 c. Asiago Cheese Shredded
3 1/2 c. Four Cheese Bland Shredded
8 c. Elbow Macaroni
1 Onion
10 Cloves Garlic
1/2 c. Butter
1 1/2 tbsp. Paprika
1 1/2 tbsp. Salt
1 tbsp. Pepper
2 c. Milk
1 1/2 c. Heavy Cream
1 c. Sour Cream

Preheat oven to 350. Cook pasta according to directions and set aside.

Toss the cheeses together in large bowl.

Toss the macaroni with 4 c. of the cheese mixture.

Puree the onion and garlic. Melt the butter in large pot add the puree. Reduce the heat to low and whisk in the paprika, salt and pepper.

Whisk in the milk, heavy cream and sour cream until mix comes back to low simmer. Whisk in about 6 c. more of the cheeses. Whisk until the cheeses melt. The mix will stop simmering.

Pour the hot cheese sauce over the pasta, mix well, and transfer to a oven dish. Scatter the remaining cheese over the macaroni. Cover the dish with plastic wrap and then aluminum foil. Bake for 30 min.
