1 cup sugar
1 cup grated carrots
1 cup raisins
1 cup flour
1 tsp bkg soda
½ tsp all spice
pinch of salt
1 cup suet
1 cup chopped nuts @ walnuts or pecans

Sauce
1 cup sugar
1 Tbsp flour
1 cup whipping cream
¼ cup butter (1/2 cube)

Directions:
Directions:
Mix all ingredients together into a stiff dough. Put mixture in 2 quart size jars, filling about 1/2 way. Cover will foil. Put quart jars in a sauce pan with 3-4 inch of water. Should cover jar about 1/2 way and all the mixture. Bake at 250º for 3 hours.

Sauce:
Mix together sugar and flour in a heavy sauce pan.
Add whipping cream liquid. Do not whip. Just pour liquid into sugar and flour. and add ¼ cup butter. Do not substitute something else for butter. Cook on low heat until it thickens and boils. Pour a few Tbsp over pudding when serving.

Note: If you cannot find suet (will need to ask for at the meat counter of your favorite store) you may substitute oil @ vegetable, canola, or evoo.
