1 cup sugar
1 cup grated carrots
1 cup raisins
1 cup flour
1 tsp bkg soda
tsp all spice
pinch of salt
1 cup suet
1 cup chopped nuts @ walnuts or pecans

Sauce
1 cup sugar
1 Tbsp flour
1 cup whipping cream
cup butter (1/2 cube)

Directions:
Directions:
Mix all ingredients together into a stiff dough. Put mixture in 2 quart size jars, filling about 1/2 way. Cover will foil. Put quart jars in a sauce pan with 3-4 inch of water. Should cover jar about 1/2 way and all the mixture. Bake at 250 for 3 hours.

Sauce:
Mix together sugar and flour in a heavy sauce pan.
Add whipping cream liquid. Do not whip. Just pour liquid into sugar and flour. and add cup butter. Do not substitute something else for butter. Cook on low heat until it thickens and boils. Pour a few Tbsp over pudding when serving.

Note: If you cannot find suet (will need to ask for at the meat counter of your favorite store) you may substitute oil @ vegetable, canola, or evoo.
