2 cups coconut milk (I like the Trader Joe’s Brand)
½ cup black Chia seeds
1 teaspoon vanilla extract
¼ cup 100% maple syrup
Pinch of cinnamon to your liking



Directions:
Directions:
Mix all ingredients in a bowl, cover and refrigerate. The pudding will congeal overnight, adjust flavor and stir before serving.

This is a great base recipe. It’s fun to add other ingredients like toasted nuts, various dried fruit, or other flavored extracts and spices.
