7 large carrots, peeled and cut in half lengthwise
2 tablespoons olive oil
1/2 teaspoon Chinese five-spice powder (or more depending on taste)
salt to taste

Preheat oven to 375º
Cut halved carrots in half again crosswise on the diagonal.
Place carrots into a 2-quart baking dish and drizzle with oil; sprinkle with 5-spice powder and salt to taste. Toss lightly to coat carrots with oil and seasoning. Arrange carrots into an even layer.
Roast carrots in the preheated oven for 15 minutes; check for tenderness and stir if desired. Continue roasting until tender, 15 to 20 more minutes.

Can also be cooked on a grill Season carrots, adding a little extra oil to the foil. Wrap in foil and grill 20-30 minutes turning once.
