"When I'm at a Chinese restaurant having a hard time with chopsticks, I always hope that there's a Chinese kid at an American restaurant somewhere who's struggling mightily with a fork."--Rick Budinich

7 1/4 to 7 1/2 c. Flour
1/4 c. Sugar
2 tsp. Salt
2 pkgs. Quick Active Dry Yeast
2 c. Very Warm Water
1/4 c. Butter Softened
2 tbsp. Cold Water
1 Egg Yolk

Directions:
Directions:
Mix 3 c. flour, sugar, salt and yeast in large bowl. Add milk, 1/4 c. butter and eggs to flour mix. Beat on low speed for 1 min. Beat on medium speed 1 min. Stir in enough remaining flour, 1 c. at a time to make dough easy to handle.

Turn dough onto lightly floured surface. Knead about 5 min. until smooth and elastic. Place in greased bowl, turn grease side up. Cover and let rise in warm place for 1 to 1 1/2 hr. or doubled in size.

Grease cookie sheets. Punch down dough. Divide into 3 parts. Divide each 3 into another 3 parts. Shape each into strand about 14 in. long. Braid each group of 3 strands loosely on cookie sheet. Pinch ends and tuck under. Brush with butter. Cover and let rise 40 to 50 min. to double in size.

Heat oven to 375. Mix cold water and egg yolk, brush over braids. Bake 25 to 30 min. or until golden brown and sound hollow when tapped. Cool on wire rack.
