Ingredients: |
Ingredients: 1 - 10 oz. pkg. of fresh, frozen, or dry cheese tortellini 1 c. diced fresh mozzarella or mozzarella pearls ½ c. diced salami or pepperoni ½ c. diced cucumber ¼ c. minced sweet or red onion or sliced green onion ½ c. halved black olives 1 c. halved cherry tomatoes
1 c. prepared Italian salad dressing 1 clove minced garlic (or put it through a garlic press) ¼ c. grated Parmesan cheese
Fresh basil for garnish

Directions:Cook the tortellini according to package directions being careful not to overcook them; fresh ones only take about 3 minutes. Drain and run cold water over them to stop the cooking. Mix the dressing ingredients and set aside. Put the drained pasta in a salad bowl. Add remaining veggies and toss to combine. Add salad dressing and toss again. Allow to sit for at least an hour to blend the flavors. Sprinkle with fresh basil leaves just before serving. |

Notes: This is such a quick delicious salad. It is best served at room temperature and is great for pot lucks or BBQ's because there is no mayo in it so no worries about spoilage. I use Good Seasons Italian Dressing mix but any good quality prepared dressing will do, or you can always make your own.
For a Greek salad flavor just change the black olives to Kalamata olives and the mozzarella cheese to crumbled Feta cheese and put a little extra oregano in the dressing.
