2 cups crushed Vanilla Cookie or Graham Crackers
3 tablespoons butter
3 – 8 ounce packages of Cream Cheese
1 cup Sugar
2 medium Bananas
2 Eggs
1 teaspoon Vanilla
1 cup miniature Semi-sweet Chocolate Chips

Directions:
Directions:
1. Preheat the oven to 325°F and grease a 9-inch springform pan.
2. Place cookies in a food processor or blender and blend until the cookies are reduced to fine crumbs. Mix the cookie crumbs and butter; press firmly into the bottom of the springform pan. Bake the crust for 10 minutes.
3. Add the cream cheese and sugar to a large bowl. Beat with an electric mixer on medium speed until well blended. Add bananas and vanilla; mix well. Add the eggs, 1 at a time, mixing on low speed after you add each egg until it is just until blended. Stir in the miniature chocolate chips.
4.Pour the banana cream cheese mixture over the crust.Bake the cheesecake for 55 minutes or until the center is almost set.
5. Remove from the oven and place on a cooling rack. Run a knife around the rim of the pan to loosen the cheesecake from the pan. Cool on a wire rack until it is room temperature, then transfer to the refrigerator and chill uncovered for a minimum of 4 hours.
6. If desired, top with whip cream, a slice of banana, and additional chocolate chips.
Note: Store the leftover cheesecake in refrigerator.
