Ingredients:  
3 chicken breasts, skinned, boned and halved.
Salt and pepper to taste
1 1/2 chopped fresh tarragon
Flour
6 Tbsp clarified butter
18 medium mushroom caps
1/3 cup white wine

Directions:
Directions:
Season the breast on both sides with salt and pepper.
Sprinkle the tarragon on both sides. Press in.
Dredge lightly with flour.
In a large skillet, over medium heat sauté the breasts in butter, until firm. Approximately 18 to 20 minutes.
Remove and keep warm.
Sauté the mushrooms in the same pan until warmed through.
Deglaze the pan with white wine and reduce slightly.
Arrange the mushrooms on the breast and spoon the juices over.
