2-2¼ lbs. fresh or frozen Shrimp (in shells)
½ cup Celery Leaves
1 tsp. Salt
7-8 Bay Leaves
¾ cup White Vinegar
2½ tsp. Celery Seed
3 drops Hot Pepper Sauce
¼ cup Mixed Pickling Spices
2 cups sliced Onions
1½ cups Salad Oil
3 tbsp. Capers with juice
1¼ tsp. Salt

Directions:
Directions:
In saucepan, cover shrimp with boiling water; add celery leaves, pickling spices and 1 tbsp. salt. Cover and simmer 5-8 minutes, and drain. Peel and devein shrimp, if needed. Layer shrimp, onion and bay leaves in a shallow dish. Combine remaining ingredients and pour over shrimp. Cover, and chill at least 24 hours.
