Ingredients: 1 can (13 oz.) CHILLED OVERNIGHT evaporated milk 1 cup hot water 1 package lemon jello (3 oz.) ½ cup granulated sugar 1 juice of a fresh squeezed lemon or 2 tbsp real lemon juice 1½ cups or 1pkg Nabisco 'Nilla cookie wafers 1 pint whipping cream

Directions:***Pudding is best when made 1 day ahead of serving***
Step #1
In a small bowl, disolve jello in 1 cup of hot water. Add ½ cup of sugar and lemon juice. Place mixture in freezer until it starts to jell. (about 25-30 minutes)
Step#2
In a large bowl, beat milk until thick and cream coloured. Remove jello mixture from freezer, beat lightly and add to milk in the large bowl. Beat milk and jello together until well blended.
Step #3
Pour Mixture into a 7x12x2 inch pan (Pyrex pan is good). Chill in refrigerator until firm (overnight is best)
Step #4
Remove from refrigerator and leave pudding in pan. Top pudding with crushed wafers (use nut/meat chopper) and Whip-cream. Cut into squares to serve.
Makes 8-12 portions. |
