1/2 cup sweet chili sauce
1 teaspoon fish sauce
1/4 cup canned coconut milk (I used one small can)
3 tablespoons brown sugar
2 cloves garlic
2 tablespoon creamy peanut butter
1 teaspoon -sized knob of ginger (or more)
1 lime + the zest
2 tablespoons soy sauce
1 tablespoon peanut oil (or olive oil)

Directions:
Directions:
Combine all the ingredients together for the sauce and whisk until combined and fairly smooth.
Place in a small saucepan and bring to a boil, then reduce to a simmer and cook for 3-4 minutes until slightly thickened. Watch it closely, as it browns quickly.

Can be used for Cole Slaw, or as a burger topping or can be used to cook shrimp in with red peppers etc, then add vermicelli noodles to make a Thai noodle bowl. Top with green onions, cilantro, chopped peanuts, lime wedges etc.
