Weight Loss Vegetable Soup Recipe

1 small onion
2 cloves garlic, minced
1 cup diced carrots
1/2 head cabbage, chopped
1 cup green beans
2 bell peppers, chopped
1 28 oz can low sodium diced tomatoes
6 cups low sodium beef broth
2 Tbsp tomato paste
2 bay leaves
tsp each thyme and basil
pepper to taste
2 cups broccoli florets
2 cups sliced zucchini

In a large pot, cook onion and garlic over medium heat until slightly softened.
Add carrots, cabbage and green beans and cook an additional 5 to 7 minutes.
Stir in bell peppers, undrained tomatoes, broth, tomato paste, bay leaves and seasonings. Simmer 6 to 7 minutes.
Add in zucchini and broccoli. Simmer until softened to your liking.
Remove bay leaves before serving.
