8.5 inch round rice paper
cooked shrimp
dried vermicelli noodles
butter lettuce leaves
mint leaves
bean sprouts

Dipping sauce:
1 tablespoon peanut butter
2 tablespoons Hoisin sauce
1 and 1/2 tablespoons white vinegar or lime juice
1/3 cup milk
1 garlic clove, minced
1/2 teaspoon chili paste

Directions:
Directions:
Combine dipping sauce ingredients and microwave for 30 seconds-1 minute until smooth.

Soak vermicelli noodles in warm water for 2 minutes and drain.
Place some noodles and bean sprouts in a lettuce leaf (remove crunchy core), then roll up.
Fill large bowl with warm water.
Submerge rice paper in water all around for a few seconds.
On top of rice paper, place 3 shrimp with mint leaf in between.
Place lettuce bundle in middle of rice paper.
Fold left and right edges of rice paper in, then roll up to cover lettuce bundle.

Serve with peanut dipping sauce.
