12 Tbsp unsalted butter (softened)
6 large egg yolks
1/2 cup boiling water
2 tsp lemon juice
1/2 tsp cayenne pepper

Directions:
Whisk butter and egg yolks together in a large heat resistant bowl set over a medium saucepan, with 1/2 inch of barely simmering water. (Don’t let the bottom of the bowl, touch the water).
Whisk until the mixture is smooth and blended.
SLOWLY add the 1/2 cup boiling water.
Whisk CONSTANTLY until thickened and sauce registers 160-165 degrees on a instant read thermometer. (7 - 10 minutes).
Off heat stir in the lemon juice and cayenne.
Season with salt to taste.
