3 lb. roast
1 large onion
2 bay leaves
Celery leaves
1 lb. mini carrots
3 lbs. potatoes
1/4 cup canola oil
1/2 cup flour

Directions:
Directions:
1. Brown roast in oil, set aside skillet.
2. Add 1” water in large pan and place browned roast, onion, bay leaves, celery leaves and carrots.
Cook on medium heat for 2 hours. If more water is needed please add.
3. Meanwhile peel potatoes and slice in 4 pieces and add to roast pan. When roast is tender and potatoes are cooked, drain liquid for gravy.
4. Add flour to hot grease in skillet used to brown roast. Brown flour and add liquid from roast and additional water to make gravy. Pour gravy over potatoes and carrots in pan.
5. Let simmer for 10 minutes, slice roast and serve.

Mom also used this same recipe and baked it in oven. You do not have to brown roast in oil or make gravy. Just place ingredients in a roaster pan and bake on 350 degrees for 2 1/2 hours and serve au jus.
