2 TBSP oil
2 lbs. uncooked shrimp
2 cloves of garlic minced
1 can or tomato paste 2 tsp salt
1/2 tsp black pepper
1/2 tsp dried basil
1/2 cup chopped onion
1 cup water
4 servings rice

Directions:
Directions:
Cook Shrimp in oil, in a hot skillet, until they turn pink, turning several times. Remove from heat. Stir in all other ingredients along with 1 cup water. Simmer, covered until thoroughly heated. Prepare rice as directed. Serve shrimp over rice.

As a young wife and mother, my husband's Grandparents used to go to the Gulf and go shrimping. They always came back with pounds and pounds of fresh shrimp. Having them catch the shrimp was the only way my family could afford such a delicious delicacy as shrimp. But the deal was my husband and I had to come over, after they got home with the shrimp, and we had to help clean them and prepare them for the freezer. Which we were happy to do. The trade off was well worth it.
