Grasshopper Pie Recipe

Pie filling:
24 large marshmallows
⅔ c half and half
2 Tbsp creme de cocoa
2 Tbsp creme de menthe
1 c whipping cream, whipped
Crust:
18 chocolate wafer cookies
5 Tbsp melted butter

Directions:
Directions:
In a double boiler slowly melt the marshmallows with half and half. Let cool. Add the liqueurs and stir. Mixture will turn a mint green color. Fold in whipped cream and blend well.
For the crust, crush the chocolate wafers (a food processor works well),add the melted butter and mix well. Pat in bottom of pie pan. Bake for 5 minutes at 350º; do not burn. Let cool before pouring pie filling in crust. Chill and serve cold. Shave dark chocolate on top before serving if desires.

You can purchase a ready made chocolate crust, but homemade is much better. The pie looks festive during the holidays.
