Ingredients: 9 or 10 tomatoes 3 bunches of cilantro 2 red bell peppers 3 avocados 12 limes 2 small onions 10 garlic cloves 12 chile de arbol peppers (these peppers are pretty spicy, but have a nice smoky flavor to them. You can also use jalapeno, serrano or whichever peppers you like.)

Directions:1. Rinse the tomatoes, place in a cast iron pan and put under the broiler in the oven. You'll blacken these for 10 minutes or so on each side. Pull the tomatoes once they are blackened on both sides. 2. Rinse all your veggies. 3. Rough chop the onions and peel the garlic. 4. Start heating some vegetable oil in a large skillet over medium heat. 5. Throw the garlic and the chopped onions in the skillet. 6. Chop the bell pepper and add to the skillet. 7. Add the peppers. 8. Keep stirring the veggies for 20 minutes of so until they are nice and caramelized. 9. Juice all the limes while the veggies are cooking. 10. Once the veggies are cooked down, throw them, the avocado, and the cilantro (be sure to remove the stalks) into a food processor. You may have to do this in smaller portions to get it all to fit. 11. Add salt to taste once it's out of the processor.
Protip: Portion out some salsa into a bowl and stir in some curry powder. Its delicious. |
