1½ lbs. lean Ground Beef
1 tsp. seasoned Salt
1 cup Yellow Corn Meal
2½ cups cold Water
1 package Chile Seasoning Mix
1 large Onion, chopped
1 can (16 oz.) Tomatoes
1 tsp. Salt
1 cup grated Cheddar Cheese
½ cup chopped Green Pepper and/or 1 can green Chilies
1 can (12 oz) whole kernel Corn
1 can small pitted Black Olives, drained and cut in half

Directions:

Brown ground beef in skillet until crumbly. Add onion, green pepper and/or chilies, salt and chili seasoning mix. Add tomatoes, combine thoroughly, and simmer for 10 minutes. Add corn and olives, but save some split olives for dressing finished dish. Mix all to combine. Spread mixture in a 2 quart casserole dish.

Combine cornmeal, salt and water in a saucepan. Cook slowly until thickened, about 10-15 minutes. Spread cooked corn meal around edges of casserole in a cuff border. Bake at 350º for about 40 minutes. Sprinkle grated cheddar cheese over top and bake a bit more until melted and bubbly. Decorate with remaining split olives.
