3/4 c. flour
Salt and freshly ground pepper
6 tbsp. butter
3/4 c. ham or bacon, chopped
2 eggs, beaten
1/2 c. cream
3/4 c. cheddar cheese, grated

Directions:
Directions:
Preheat oven to 425º F.

Sift together the flour and salt into a bowl. Rub in the butter until the mixture resembles fine breadcrumbs. Add enough water to knead into a firm dough.

Roll out the pastry on a lightly floured work surface and use to line an 8” pie plate.

Scatter the meat over the pastry. Beat the eggs, fresh cream, seasoning and grated cheese together. Pour the mixture over the bacon.

Bake for 7-10 minutes. Reduce to 375º F for an additional 20-30 minutes, until golden brown.

Serve hot or cold.
