½ cup unsalted butter
¾ cup sugar
1 cup flower
2 eggs
1 tsp baking powder
½ tsp salt
½ tsp almond flavoring
12 Italian plums or 6-8 black or red plums
½ lemon

Topping: 1/2 tsp cinnamon and 1 tsp sugar, blended

Preheat oven to 350º. Cut plums in half, remove pits. Butter 9" spring-form pan. Mix topping, set aside. Cream butter and sugar. Add eggs, mixing well. Add flour, baking powder, and salt, mix well. Spoon into buttered pan. Arrange plum halves, skin side down, on dough. Squeeze lemon so juice covers plums. Spread cinnamon sugar mixture over plums. Bake approximately 45 minutes to an hour. Cool before cutting, refrigerate.
Freezes very well!
