2 lbs boneless skinless chicken breasts sliced 1/4" thick
1/2 cup flour with a few pinches of onion powder, garlic salt & black pepper to dredge
2 vidalia or sweet onions sliced into strips
1/4 cup extra virgin olive oil
1 1/2 tbsp butter
2 18.5 oz cans ready to eat french onion soup (Progresso) or Campbells condensed, add water
4 - 6 slices texas toast (parmesan garlic)
1 pk onion soup mix
3 tbsp cornstarch & 3 tbsp water
10 slices swiss cheese
Crispy fried onions for topping

Coat chicken in flour mixture, set aside. Add olive oil to instant pot hit saute and wait until hot. Add chicken in batches and lightly brown. Add butter to pot, add onions and cook until browned a bit. Stir to deglaze pan. Add canned onion soup and stir. add chicken back to pot. Pressue cook on high for 5 minutes. Make texas toast or garlic bread. When done add toast to casserole dish. Remove chicken only from pot set aside. Saute and add cornstarch slurry and onion soup mix stir and mix well and bring to bubbling for 1 minute. Layer chicken over texas toast and top with sauce and cheese, broil to melt cheese and top with crispy onions.Use a spatula to get under toast to serve.
