4 Tbsp Butter
1 Lrg onion, chopped
1 Lrg green pepper, chopped
2 tsp oregano
1 (1 lb) can crushed tomatoes
1 (5 oz) bag tortilla chips
8 oz jack or cheddar or both cheese, grated
2 c. Cooked turkey or chicken, cubed
1 c. Sour cream
1/4 c. Grated cheese for top

Directions:
Sauté onion, peppers and oregano in melted butter. Add tomatoes and simmer 5 mins. Layer the 9x13 inch casserole dish this way:
1/2 chips, crushed by hand
1/2 of the 8 oz grated cheese
1/2 turkey or chicken
1/2 of the tomato sauce mixture
REPEAT....ending up with the sauce

Bake at 350º.for 20-25 mins.
Spoon sour cream and 1/4 c cheese on top.
Return to oven, bake for 5-10 minutes until cheese melts and is bubbly.

Can serve alone or over rice.

Perfect for Thanksgiving left overs. My family LOVES this (Sadie really loves this) so I work this meal into the size of the Turkey I buy.

May have to adjust the amount of sour cream and cheese depending on your taste.
