¼ c shortening
⅔ c sugar
2 eggs, beaten
2 c flour
1 tsp baking powder
1 tsp soda
1 tsp salt
2 c grated apples
1 tsp lemon rind
⅔ c chopped nuts

Directions:
Directions:
Cream shortening and sugar until light and fluffy. Beat in eggs. Sift next 4 ingredients. Add alternately with apples to egg mixture. Stir in lemon rind and nuts. Bake in greased and floured loaf pan, 9 x 5 x 3 inches for 50-60 minutes at 350º. Cool before slicing.
