1 small onion, chopped
⅓ cup butter
⅓ cup all-purpose flour
1½ tsp salt
½ tsp pepper
1 can (14.5 oz) chicken broth
1 cup half & half cream
4 cups cubed cooked chicken
4 cups cooked wild rice
8 oz sliced fresh mushrooms
1 jalapeno with seeds, chopped
1 Tbsp minced fresh parsley
⅓ cup slivered almonds

1. In a large saucepan, saute onion and mushrooms in butter until tender. Stir in the flour, salt & pepper until blended. Gradually stir in broth; bring to a boil. Boil and stir for 2 minutes or until thickened and bubbly. Stir in cream, chicken, rice, jalapeno and parsley; heat through.
2. Transfer to a greased 2½ qt. baking dish. Sprinkle with almonds. Bake uncovered @ 350º for 30-35 minutes or until bubbly.
