2 c flour.
2 tsp Baking powder
1 tsp baking soda
1/2 tsp salt

Combine these dry ingredients in a mixing bowl. Then add the following wet ingredients.

2 2/3 c buttermilk
2 eggs
2 Tbs vegetable oil
1 tsp vanilla extract

Mix until well blended. Pour onto hot griddle in approx 6” circles. You can also use this batter in a waffle iron.

I remember our father whipping egg whites to make his pancakes light & fluffy. I think my recipe is just as good without the extra step of whipping the egg whites. Buttermilk is the secret.
