Ingredients:  
Ingredients:  
3 lbs potatoes, boiled in skins,red
6 slices of bacon , fried crisp, I use more
1 medium onion chopped fine, I mix green onions and red

Peel and slice potatoes , when cool add crisp fried bacon and onion

Dressing

Drippings from bacon
2 tbs flour
½ c vinegar
½ c water
½ c sugar

½ tsp parsley flakes
½ tsp celery seed
Salt
Pepper

Directions:
Directions:
Boil dressing ingredients until thick. I like to brown the flour first in bacon grease but that’s optional.
Add seasonings. Pour over bacon, potatoes, and onion. Mix and serve.

I usually double, triple the dressing . Also sometimes lay potatoes in pan and pour on dressing and bake a bit.
