2 lbs cooked and shredded chicken
1 cup mayonnaise (I use my homemade mayo)
1 cup chopped pecans or walnuts
2 cups diced apples
1/2 cup diced celery
1/2 cup chopped green onion
2 Tbsp apple cider vinegar
3 Tbsp fresh lemon juice
2 Tbsp raw honey
salt and pepper to taste

Directions:
Directions:
In a small bowl, combine the mayonnaise, apple cider vinegar, lemon juice and honey.
In a large bowl, add the shredded chicken, nuts, apples, onion and celery
Add the liquid mixture to the large bowl and combine thoroughly, then add salt and pepper to taste.

Serve on lettuce leaf with a roll or use as filling in a croissant roll.
